Caramelised Apple TartServes 4
For the pastry:
Plain flour 500g, Isigny butter 300g,
Caster sugar 200g, 2 eggs, 1 vanilla pod
For the caramel:
Granulated sugar 100g, 2 cl water, 20 cl single cream, warmed 50g salted butter, 4 apples peeled, cored and diced, 150g raisins, 50g pistachio nuts, 50g mixed chopped nuts
Salted butter caramel
Cook the sugar in a pan with the water, and deglaze with the warmed single cream then stir in the salted butter
Mix the butter and sugar until soft with a mixer
Add the eggs, one by one and add the sifted flour
Finish by adding the seeds from the vanilla pod
Place the pastry into 4 individual tart cases
Cook for 20 minutes at 180°c
Lightly fry the diced apple and the raisins in the butter.
Add the pistachios and the mixed nuts and incorporate half of the caramel sauce.
Divide the fruit filling mixture between the four tarts, add the remaining caramel sauce and serve.
